This past year I’ve been on a bit of a slow-cooker recipe kick, as I know this is something that a lot of women who do my free 30-Day PCOS Diet Challenge are interested in seeing more of.
In saying that, I don’t know about you, but I have a bit of an on-again, off-again, relationship with Crockpot meals. They’re SO easy and SO convenient, but I find they can also get a bit tiresome when I have them too often. It can kind of feel like they all begin to taste the same after a while.

While this recipe has been written for use with a Crockpot, a pressure cooker is equally suitable. There are many resources online to help you convert the cooking times! Check out this list for more PCOS dinner ideas.
Here’s everything you’ll need to make this PCOS-Friendly Harvest Chicken Chili:
- Chicken breast
- Olive oil
- Chili powder
- Paprika
- Ground cumin
- Garlic powder
- Cayenne pepper
- Salt
- Black pepper
- Chicken stock
- Pumpkin puree
- Canned corn
- Canned black beans
- Onions
- Red bell peppers

Harvest Chicken Chili (PCOS-Friendly)
Anything that goes well with cilantro, lime, and avocados is likely to be good right? This dish is no exception.
Ingredients
Protein
- 22 oz Chicken breast
Pantry
- 4 tbsp Olive oil
- 1 tsp Chili powder
- 2 tsp Paprika
- 1 tsp Ground cumin
- 1 tsp Garlic powder
- 1/8 tsp Cayenne pepper
- 1 tsp Salt
- 1 tsp Black pepper
- 1 cup Chicken stock
- 1 cup Pumpkin puree
- 15 oz Canned corn (drained)
- 15 oz Canned black beans (drained)
Vegetable
- 1 Onion (finely chopped)
- 2 Red bell peppers (chopped into small pieces)
Instructions
- Add all of the ingredients, apart from the canned corn and black beans, into a crockpot. Cook on low for 5 hours.
- Add the canned corn and black beans, and continue cooking for another hour or so.
- Once done, shred the chicken, then cook for a further 10 minutes to allow the chicken to absorb some of the liquid.
- Best served over cauliflower rice, and garnished with avocado, cilantro, and lime.
